A seed oil is called ” virgin” if it’s made by pressing or crushing the seeds or nuts without the addition of heat. This process uses high pressure instead of high heat to unlock the oil stored inside the seeds or nuts. If using heat, chemicals are also added to increase the oil yield (and these chemicals remain in the oil).
Cold pressing preserves the nutrients, natural flavours and aromas of the seed or nut.
To increase yield from cold-pressing, the seed cake remaining after the first pressing can be passed through the cold press process a second or even a third time. The oil from the first pass has the lightest colour and the best overall qualities. This is what is called “extra virgin”.
Furthermore, to be called “extra virgin”, an oil must also meet stringent quality and purity standards.
Now, what is wrong with heat-processed oils?
Firstly, they contain added chemicals. The primary chemical used is hexane, a petro-chemical solvent and known carcinogen. Other chemicals that may be used are pentane, heptane or octane – all of them carcinogens.
To make matters worse, the heat processing changes the nature of the final product. It becomes high in something called poly-unsaturated oil. Now, if you grew up in the 80s and 90s, you will know how the Heart Foundation promoted poly-unsaturated oil for heart health. Margarine, sunflower oil, canola oil and safflower oils were all regarded as “heart healthy” due to their high poly-unsaturated content. In reality, however, it was the opposite. We now know that poly-unsaturated oil (especially the omega-6 version found in heat processed oils) is highly inflammatory to the arteries and a leading cause of heart disease (and even cancer).
Talk about misinformation.
In the past decade, the cost of extra virgin olive oil has shot through the roof. “Big Food” responded to this by diluting olive oil with heat-processed seed oils, such as sunflower oil. This is perfectly legal, as long as this is declared on the label. The declaration is, however, placed on the back label, in small print. The oil may not be designated as “virgin” or “extra virgin”, but few shoppers understand these terms anyway, and so they buy the cheapest “olive oil” on the shelf.
In stark contrast, cold-pressed oils such as extra virgin olive oil and macadamia nut oil are high in mono-unsaturated oils. Not only do these provide good nutrition, they are also anti-inflammatory. In other words, the higher the mono-unsaturated component of a seed or nut oil, the healthier it is for your heart and arteries.
